It’s amazing what a great sauce can do for a dish. Case in point: this beyond-delicious Chimichurri, compliments of my friend Carol Anne. She introduced me to the recipe when she had us over for dinner – and I was instantly hooked. So fresh and flavorful, it adds the best kind of kick to a variety of dishes. I’ve been making it non-stop this summer as a complement to halibut and veggies, and it would be incredible drizzled on top of skirt steak. XXJKE

Ingredients
- 1 cup 237 ml parsley fresh Italian, packed
- 1/2 cup 118 ml olive oil
- 1/3 cup 79 ml vinegar red wine
- 1/4 cup 59 ml cilantro fresh, packed
- 2 cloves garlic peeled
- 3/4 tsp red pepper dried, crushed
- 1/2 tsp cumin ground
- 1/2 tsp salt
Combine without stems in a food processor adding oil slowly. Enjoy!
