I find myself making zucchini all summer long, and am forever looking for great new recipes. I discovered this amazingly delicious one on Pinterest, and am now officially obsessed. An instant classic that the whole family loves, it has enjoyed heavy rotation this season, with the added bonus of being so easy to make. XXJKE

Parmesan Lemon Zucchini Recipe By Damn Delicious

Ingredients
- 3 tbsp butter unsalted
- 2 cloves garlic minced
- 4 zucchini thinly sliced to1⁄2-inch thick rounds
- 1/2 tsp thyme dried
- 1 lemon just the zest
- 2 tbsp lemon juice freshly squeezed, or more, to taste
Melt butter in a large skillet over medium high heat. Add garlic to to the skillet, and cook, stirring frequently, until fragrant, about 1 minute.
Working in batches, add zucchini, thyme and lemon zest. Cook, flipping once, until golden, about 1-2 minutes on each side; season with salt and pepper, to taste.
Serve immediately, sprinkled with Parmesan and lemon juice.
